Baked potato wedges are my go-to recipe, so I can’t believe that after almost 3 years of blogging this recipe is still not on the blog. So here it is, the best potato wedges ever, crispy on the outside, pillowy on the inside, with a touch of garlic and herbs!

Potato wedges make for a great vegan side dish and my favorite way to serve them is with vegan burgers. So yummy!

I know that many of you think that potatoes aren’t good for you. Here is what I have to say to that.

Health Benefits of Potatoes

Potatoes are carbs but not only. They also contain vitamin C, potassium (if you leave the skin on), vitamin B6, calcium, iron and dietary fiber. They don’t contain fat, sodium and cholesterol.

Potatoes are an excellent source of energy, fueling your body and brain. They are easy to digest, so they are perfect babies and toddlers who need energy but can’t digest hard food yet.

Thanks to fiber, potatoes are good for your heart and blood system, scraping the cholesterol out of your blood vessels.

Vitamin C and B6, as well as minerals found in potatoes help you maintain healthy skin. You can even apply them to your face 😀 They possess cleansing, soothing, brightening, anti-aging and anti-acne properties.

Potatoes are also great against sunburns and insect bites.

Just make sure you don’t use fries but these oven baked potato wedges! You should definitely give Canarian wrinkled potatoes and German potato pancakes a try as well.

In addition to that, potatoes help you relieve high blood pressure, reduce internal and external inflammation, treat diarrhea and kidney stones.

Here comes the question: If potatoes are so healthy, how come they have an „unhealthy” reputation?

The answer to this is: What matters is the way you cook them. The misconception of potatoes being unhealthy comes french fries and potato chips. But it has nothing to do with the vegetable itself.

Healthy Ways to Cook Potatoes

To benefit from all the nutrients potatoes provide it is recommended not to peel them. Just brush the dirt off with a brush and cut off any dark spots.

Avoid deep frying potatoes as most of the nutrients will disappear. Additionally, you will end up with a lot of extra fat and what is even worse, trans fats. I don’t think I have to tell you how bad they are.

But no worries, one occasional portion of fries will not make or break your healthy diet. Just make sure it’s not turning a habit.

If not frying, how to cook potatoes then?

There are three healthy ways to cook potatoes and they are boiling, steaming and baking.

I found a comprehensive guide for you on how to steam potatoes. Benefits of steaming are that most of the nutrients and flavor are preserved.

Boiling is also a good option but make sure to add potatoes to boiling water rather than cold. It will retain the vitamin C content and reduce the cooking time.

Luckily, baking potatoes is also a healthy way to eat them and one of the most delicious as well!

Below are some tricks for you on how to make the crispiest and the yummiest baked potato wedges.

How to Make Baked Potato Wedges

 

    1. Start with selecting potatoes. For the baked potato wedges, my recommendation will be waxy potatoes with a low starch content like Red Bliss, New Potatoes or Yukon Gold. They will hold their shape better than starchy kinds. If you struggle to figure out what potatoes are best for boiling, roasting or gratins, here is a cheat sheet explaining which type of potatoes is right for different dishes.
    2. Make sure your potatoes are all roughly the same size.
    3. Wash and scrub your potatoes well. Since you are not going to peel them, make sure to get rid of all the dirt and cut off the dark spots.
    4. Cut potatoes in wedges lengthwise. If you are using small potatoes, cut them in quarters. Medium-sized ones you can cut either in 6 or in 8 wedges. They should have the same shape. Avoid cutting potatoes into chunks like as you would for french fries.
    5. In a large bowl, mix potato wedges with olive oil, garlic powder, smoked paprika, chopped rosemary, salt and pepper. Use your hands to rub the oil and spices all over the wedges. You can feel free to season the wedges the way you like.
    6. Line a sheet pan with parchment paper. You can also use nonstick aluminum foil.
    7. Arrange the potato wedges in a single layer trying not to overcrowd them. Throw a few rosemary sprigs on top for extra flavor.
    8. Bake in the preheated (to 200 C or 390 F) oven for 25 minutes, flip them over and bake for additional 25 minutes. Enjoy!
    9. Serve them with ketchup, sour cream, vegan buffalo sauce, vegan mayo, vegan blue cheese dressing, mojo rojo, tkemali or your favorite dip.

Ingredients

  • 1.5 lb or 700 g potatoes see notes
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons fresh rosemary, chopped optional
  • 3-4 sprigs fresh rosemary

Instructions

  • Preheat the oven to 200 C or 390 F. Wash and scrub your potatoes well. Since you are not going to peel them, make sure to get rid of all the dirt and cut off the dark spots.
