Ingredients

How to make it?

In a large pot, sterilize jars and lids in boiling water.

Put tomatoes, garlic, bay leaves, parsley, dill, scallions and oak leaves in jars. Fill jars with boiling water.

Pour the water from jars into a medium pot or saucepan. Add black peppercorns, salt and sugar and let boil. Add vinegar (if using).

Pour the brine back in the jars. Firmly close the lids. Turn the jars upside down.

Pickled tomatoes are ready within one or two weeks, depending on the size. Once you open the jar, store it in the fridge.
