butternut squash; – carrots; – garlic; – olive oil; – vegetable broth; – turmeric; – smoked paprika; – salt and pepper.

How to make it?

Peel and dice vegetables

Roast in the oven for 30 minutes

Transfer to a pot and simmer

Blend in a food processor

Serve with vegan sour cream and thyme
