Mojo Verde: Canarian Green Sauce
Mojo Verde: Canarian Green Sauce made of cilantro, garlic, olive oil and cumin is perfect for roasted vegetables and bread and just takes 5 minutes to make.
Servings 8 servings
- 1 big bundle cilantro leaves stalks removed, or parsley
- 3 cloves garlic
- 60 grams or 1/3 cup sunflower seeds optional
- juice of 1/2 lime
- 1/2 teaspoon cumin
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 170 ml or 3/4 cup extra-virgin olive oil
- fresh bread potatoes, roasted vegetables or fish to serve
Blend cilantro (or parsley), garlic, sunflower seeds (optional), lime juice, cumin, sea salt and black pepper with a food processor or blender. Gradually add oil until you like the consistency. Serve with fresh bread, potatoes, roasted vegetables or fish. Enjoy!
Makes 1 cup or 8 servings (2 tablespoons per serving).
If you want to preserve it, just boil your jars in water for 15 minutes, cool them, pour the green sauce and a tablespoon of olive oil on top. That way you can store it in the fridge for a few weeks. If you want to store it longer, simply freeze it.
