If you follow me on Instagram, you probably know that I’m obsessed with blueberries at the moment. We’ve picked more than 7 kg (15.5 lbs) last weekend and surely ate at least 1 kg more straight from the bush 🙂 So since then, our diet mostly consists of blueberries to my great delight. I froze some of them, I made sugar free blueberry thyme jam (on the blog soon!), blueberry ricotta pancakes (absolutely delicious!), blueberry oatmeal and ate countless bowls of blueberries as a snack.The thing is, you can’t really get enough of them! They don’t get boring even after consuming them in huge amounts (and huge amounts mean until your mouth turns sour). Count me crazy but I decided to go pick blueberries again this weekend 😀 I still have a dozen ideas of what to cook with them (blueberry galette, blueberry breakfast smoothie bowls, blueberry sorbet, etc), so I really need more of them now, because the season is really short. Seriously, it’s so good and besides, it’s sugar free! Which means, you can stop feeling guilty about your cravings and satisfy them to the full extent.
How to Make Blueberry Cheesecake Ice Cream
As with Easy Vanilla Bean Ice Cream, the process is ridiculously easy. It makes it even easier, i you have an ice cream maker. I really recommend you to invest in one, because it counldn’t be more worth these 30$! It’s been a life saver for me this summer. You can find so many of them on Amazon, cheap like mine and more expensive with from Cuisinart, cute ones designed as wooden buckets (but still electric) and vintage-style ice cream and gelato makers. You can even get yourself an ice cream maker attachment for your KitchenAid standing mixer for just 60$! If you don’t have an ice cream maker, it’s still fine, but you will have to invest a bit more time into ice cream making process.
To begin with, check the instruction before using your ice cream maker (if using). I had to freeze the metal bowl for at least 8 hours before using it. To make this blueberry cheesecake ice cream with lavender you’ll only need 5 ingredients! I bet you can name at least 2 of the right now. Well, it’s kind of obvious that you need blueberries and lavender 🙂 Make sure to use culinary lavender or the one from your garden. Other ingredients include honey, mascarpone cheese and heavy cream. I kept it simple this time, but if you want , you can also add crumbled graham crackers.
First thing to do is to blend blueberries, honey, lavender and mascarpone cheese in a food processor. Whip the cream and stir it gently into the blueberry mascarpone mixture. Transfer into a bowl of your ice cream maker and start the churning (make sure you froze the bowl of your ice cream maker for at least 8 hours in advance or as per instructions). After 30 minutes of churning, check your ice cream every couple of minutes to see weather it’s ready. It should be thick but not firm. Transfer the ice cream into a container and freeze for about 2 hours. If you are not using an ice cream maker, put your ice cream in the freezer and pulse it every 20-30 minutes for 3-4 hours. - 80 ml or 1/3 cup honey
- 250 grams or 1/2 lbs mascarpone cheese
- 2 teaspoons ground lavender
- 250 ml or 1 cup heavy cream
Instructions
- Blend blueberries, honey, lavender and mascarpone cheese in a food processor. Whip the cream and stir it gently into the blueberry mascarpone mixture.
