What about an irresistibly juicy vegan falafel burger with soft pretzel bun and creamy tahini sauce?That’s all I need now, in the beginning of the barbecue season.
The best part? Although you can make it on the grill, it’s totally possible to enjoy it at home as well! That’s what I did actually – just fried falafel on a frying pan.
Right after I made these falafel burgers I bought a grill pan and I bet grilled falafel would taste great as well. So take out your grill pans, get your pretzel buns ready, and let’s make these falafel burgers right now!
I have a confession to make. I made four mini burgers and a big batch of sweet potato fries and it was supposed to make four servings. My husband and I ate it all without leaving a single piece left! I know, we shouldn’t have, but we were hungry. In fact, I don’t even regret doing it. It was so delicious!
Just as amazing as a vegan falafel burger can be: juicy falafel patties, crispy from the outside and tender from the inside, topped with the creamiest and the richest tahini sauce, lots of veggies, salty pickles (made by my mother-in-law), placed between halves of amazingly soft pretzel bun slices with a firm crust.
Add crispy and tender sweet potato fries tossed with Middle Eastern spices to this, some homemade hot sauce, some jalapeno and you are good to go.
I would call it an ultimate vegan burger because it is, believe me. If your mouth is watering right now, you got it right. You have to make it as soon as you can.
How to Make Vegan Falafel Burger with Tahini Sauce and Sweet Potato Fries
I won’t say it’s one of these 30 min meals you would usually find on my blog. Nevertheless, you can make it significantly faster, if you do some prep work in advance. Remember my baked falafel with hazelnuts? That’s a base for these burgers.
Just make a big batch of falafel, either in form of balls or patties and freeze everything you can’t eat at once. This would cut the cooking time for these falafel burgers in half!
The rest is pretty easy: bake your buns and sweet potatoes, make the tahini sauce, slice the veggies, fry your pre-made falafel (or don’t if you’ve just baked it) and that’s it! For an extra kick of spice add a spoonful of green harissa to the burgers.
You can serve it with a glass of ayran drink to complete this delicious summer meal.

Vegan Falafel Burger with Tahini Sauce and Sweet Potato Fries
Ingredients
For the falafel burgers and sweet potato fries:
- 4 pretzel buns frozen
- 3 medium-sized sweet potatoes
- 2 tablespoon tablespoons olive oil + 1
- salt and freshly ground black pepper to taste
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 4 baked falafel patties
- 4 leaves salad
- 4 slices tomatoes
- 4 slices red onion
- 4-8 slices pickles
- 4-8 slices jalapeno pepper
For the tahini sauce:
- 100 grams or 1/2 cup tahini paste
- ml about 60or 1/3 cup warm water
- 1 clove garlic
- 2 tablespoons lime juice
- 1/2 teaspoon ground cumin
- salt and freshly ground black pepper to taste
- Hot sauce or ketchup optional
Instructions
- PRETZEL BUNS: Preheat the oven to 200 °C or 390 °F. Line a baking tray with a piece of parchment paper and lay the pretzel buns on it to rest for 15 minutes (or follow the instructions on the package).
- SWEET POTATO FRIES: Meanwhile, cut the sweet potatoes into long fry-shaped pieces trying to keep the same size. Toss them with olive oil, ground cumin, smoked paprika, salt and freshly ground black pepper. Arrange them on a parchment-lined baking tray, trying not to overcrowd it. Bake for 15 minutes, then flip over and bake until ready, for about 12 minutes. The baking time highly depends on the size of your fries. Bake the rested pretzel buns for 15 minutes.
- TAHINI SAUCE: Make the tahini sauce: grid the tahini paste, water, garlic, lime juice, cumin, a pinch of salt and freshly ground black pepper in a food processor or blender for a few minutes. The sauce should be white and smooth. Adjust the thickness by adding more water or more tahini paste.
- ASSEMBLE THE BURGERS: Fry the falafel patties in a frying or grill pan with 1 tablespoon of olive oil on medium-high heat for about 2 minutes on each side (or don't if they are freshly baked). Slice the baked pretzel buns in halves and arrange the salad leaves on the bottom halves. Put the falafel patties on top. Pour some tahini sauce. Next go tomato slices, then jalapeno, pickles and onion slices. Serve with sweet potato fries and hot sauce or ketchup (optional). Use the rest of tahini sauce as a dip for the sweet potato fries. Enjoy!
