Wild garlic season signals the beginning of spring! It’s still cold outside, but much sunnier, and you can see spring blossoms here and there. We collected a lot of wild garlic in the forest near our house, so it was enough to make this soup, wild garlic pesto (on the blog soon!) and also freeze some for later. It dries nicely as well! I’m very lucky to live close to the forest, but if you are not, check your local farmer’s market or even grocery store. Wild garlic is in season in early spring, usually between late March and late April.

If there is such a thing as spring comfort food, this soups is one. It’s creamy, thick, vibrant, abundant and refreshing, while being healthy, low fat, seasonal and packed with fresh spring greens. I really enjoy a steaming bowl of this wild garlic soup in spring, especially now, when I’m staying at home with a flu, healing myself with a natural flu remedy. Spring greens loaded with vitamins and minerals should also help the healing process!

Wild garlic has antibacterial and antimicrobial effects. It’s a powerful antioxidant and blood thinner, as well as effective regulator of blood pressure. From the taste point of view, it gives a nice sweet pungency to savory dishes.

It can be used as a quick garnish, or as a main ingredient, like in this easy soup. It basically goes solo here with just a bit of other vegetables being added such as spinach, potatoes, and onion, which have rather neutral taste. Wild garlic has such a nice and unique tangy flavor, making this soup really flavorsome.

To add a nice texture to this creamy soup, I added baked carrot and red beet chips and a bit of chopped almonds. Needless to say, I ended up eating half of the chips before the soup was even ready. They are addictively delicious and very easy to make, while being healthy at the same time. Feel free to double or triple the ingredients for the chips, if you like snacking as much as I do. I love chips in general but I know how bad packaged chips are for me. Sometimes, baking instead of deep frying has a very irrelevant difference in taste but how much healthier it is! These chips are absolutely guilt-free. Together with this creamy wild garlic soup, carrot and red beet chips make a nice example of how vegan food can be delicious, beautiful, satisfying and nutritious, without being heavy and containing animal products. Instructions
  1. SOUP: Finely chop onion and garlic cloves. Peel and dice potatoes. Set a large skillet or pot over medium heat with a lug of olive oil. Sautée onion and garlic for 2 minutes, add potatoes and vegetable broth. Simmer for 15 minutes, then add chopped wild garlic (saving 6 tablespoons for garnishing) and spinach and simmer for 5 more minutes.
  2. CHIPS: Meanwhile, make the chips: Preheat the oven to 190 °C or 375 °F. Use a mandoline or a knife to slice the carrot and the red beet. Arrange them on two baking sheets and drizzle with olive oil. Sprinkle with salt and black pepper and toss to coat. Bake red beets about 17-20 minutes and carrots for about 7-8 minutes. The thinner the slices, the less time they will need to bake and the crunchier they will be.
  3. ASSEMBLING: Pulse the soup using a blender or a hand mixer until smooth. Add lemon juice, salt and pepper to taste. Pour in bowls, garnish with chips, chopped wild garlic and almonds. Enjoy!
