Are you getting sick of the same old vegan sandwiches day in and day out? You are in for a treat today because this jackfruit sandwich hits all the right spots.

It’s warm, it’s full of BBQ goodness, you can customize it with whatever you have on hand, and it only takes minutes to prepare. And the best thing of all is that it’s totally vegan, and totally healthy.

What I love about this sandwich is that it really only takes minutes to prepare when using the leftovers of my Easy BBQ Pulled Jackfruit.

Marry it together with a quick batch of Vegan Coleslaw or vegan couscous salad on the side, or stuffed right into the sandwich and this juicy, savory sandwich explodes with a fresh and crunchy kick.

Just like vegan buffalo wings, a vegan pulled pork sandwich may sound like an oxymoron. But thanks to the stringy, meat-like texture of jackfruit, and its ability to soak up flavors, it makes a perfect pulled pork substitute.

It’s also full of great nutrients including: vitamin C, potassium, and dietary fiber and it also contains substances that have anti-inflammatory, anti-bacterial and anti-fungal properties.

Don’t you love it when food not only tastes good, but it contributes to you overall well-being and health? I know I do!

How to Make Pulled Jackfruit Sandwich

If you haven’t done so already, prepare a batch of this delicious Easy BBQ Pulled Jackfruit. This is a great recipe for a busy week!

Because this recipe works well with a variety of ingredients consider making a larger batch and use it as a topping for pizza on one day, and then as a vegan sandwich on another day.

Next, whip up a creamy and crunchy Vegan Coleslaw. This crisp vegan slaw pairs so nicely with the savory, smokiness of the jackfruit sandwich.

Ingredients for the Sandwich

  • whole wheat hamburger buns;
  • jackfruit pulled pork;
  • vegan coleslaw;
  • fresh parsley;
  • additional vegan cashew mayo for extra creaminess or vegan buffalo sauce for an extra spicy kick (optional).

Finally, toast four whole wheat hamburger buns and assemble the sandwiches with layers of pulled jackfruit and cabbage slaw. Garnish them with a bit of parsley, top with a tablespoon of reserved cashew mayo or vegan blue cheese dressing (optional) and you’re finished. Dig in and enjoy!
